Try These Tasty Chili-Glazed Pork Ribs

Spring is officially underway and we find ourselves right on the cusp of summer. That means you are likely gearing up for your favorite summer activities and looking for more ways to get outside. So you can enjoy the flavors of the season while getting some fresh air, we want to offer this BBQ recipe for chili-glazed pork ribs. To make them, you will need:

  • 2 racks (6 pounds) of pork spareribs
  • 1 tablespoon of kosher salt
  • 3 tablespoons of light brown sugar
  • 2 cloves of minced garlic
  • 2 teaspoons of fresh thyme
  • 3 tablespoons of ancho chili powder
  • ¼ teaspoon of black pepper
  • ¼ teaspoon of cayenne pepper
  • 3 cups of apple cider
  • 3 tablespoons of ketchup
  • 2 tablespoons of Dijon mustard
  • 2 teaspoons of Worcestershire sauce

Pierce the membrane between each rib by making shallow cutes with a sharp kitchen knife.

In a large bowl, mix the salt, brown sugar, garlic, lime, chili powder, black pepper, and cayenne pepper. Rub this mixture evenly over the ribs and place them in a roasting pan. Cover loosely and leave in the refrigerator for at least 4 hours. You can leave them overnight.

In a large saucepan, mix together the cider, ketchup, mustard, and Worcestershire sauce. Warm over medium heat and let simmer until it has reduced to 2 cups, generally about 30 minutes.

Preheat your grill to low on one side. Cover the ribs and place them bone side down on the other half of the grill. Let cook until tender, usually about 2 hours and 30 minutes. Once they begin to tenderize, baste with the sauce and recover them. Let cook for ten minutes, then repeat the process until the ribs are fully glazed. This should take about four ten-minute sessions.
